Linguine with Clam Sauce

Ingredients

10 fresh clams (optional)

2 (6.5 ounce) cans chopped clams, with juice

1/4 tsp red pepper flakes

3/4 Tbsp cornstarch

1/4 cup butter

1/2 cup olive oil (extra virgin or preference)

2 cloves garlic, minced

1/2 tsp Old Bay seasoning (or 2 bay leaves & 1/4 tsp celery salt)

1/4 tsp oregano

1 Tbsp lemon juice

Zest of 1/2 lemon

Flat leaf (Italian) parsley, chopped, to taste

Basil, chopped, to taste

ground black pepper to taste

parmesan (optional, for serving)

1 (16 ounce) package linguini pasta (get the fresh stuff if possible)

Directions

1. Bring a large pot of salted water to boil. Cook pasta to al dente.

2. Add 1 Tbps of the olive oil to a saucepan, heated to medium, and add the red pepper flakes to tame the spiciness. 1-2 min.

3. Add garlic, Old Bay, oregano (and fresh clams if available), stir 30 seconds.

3. Combine butter, rest of olive oil, chopped clams with juice, parsley, basil, and pepper in the saucepan. Simmer for 10 mins.

4. Add lemon juice and zest. Slowly sift 3/4 tbsp of corn starch into sauce to thicken.

4. Serve hot over pasta with crusty bread slices.

5. Top with any of the following: fresh parsley, basil, black pepper, parmesan cheese, fresh squeezed lemon, or red pepper flakes (for a spicy kick).
